WHAT DOES BERTAKOTEKA MEAN ?
Bertakoteka is the taska and txoko local concept (bar and restaurant) of the AMA restaurant in Tolosa. Located in the old town of San Sebastián, this project, driven by Javier Rivero, Gorka Rico, and Iker Iriarte, the team behind the AMA restaurant in Tolosa, which boasts a Michelin star and a green star for its commitment to the environment, brings their cuisine to a casual and relaxed format. At Bertakoteka, you will find classic pintxos from the bar, hot pintxos, including their hake (recognized by the Michelin Guide), and their cheesecake, considered
among the best in Michelin-starred restaurants in Spain.
Bertakoteka also has its own txoko (dining area), where dishes are served to share in a quiet, welcoming, and relaxed atmosphere.
This is a project where local and seasonal produce sets the pace of the cuisine in all its forms. Bringing local producers, and with them our culture, closer to everyone who enters our establishment.

AMA HAKE. FROM MICHELIN GUIDE RECOGNIZED DISH TO OLD-FASHIONED PINTXO

One of Bertakoteka´s most representative pintxos is the hake, prepared with absolute respect for the product. This offering comes directly from the AMA restaurant, where their hake in pig´s ears broth an astonishing combination.
This plate was recognized as one of the best dishes by Michelin Guide inspectors in 2024. At Bertakoteka, this same idea is translated into a more accessible format, reinterpreting this hake dish as a pintxo, without losing its essence: clean flavor, careful texture, and a
